The place I go to in Bethlehem looks almost exactly like that.
cabeza on the menu and tiny soda fridge are mandatory.

Not sure why they don’t do lengua, but I am guessing they just had to stop somewhere: the shop is actually a full-service butcher (to the right).
Also possibly mandatory is the television running at all times w/ a cleavage-fest talk show or Chuck Norris/Steven Segal/Jackie Chan movie.
